Chicken is a popular meat served across India and features heavily in traditional meat-based dishes. If you enjoy chicken but tend to order the same thing every time you go to an Indian restaurant, consider ditching your old favourite for one of these popular dishes:

Achari Chicken

Achari chicken is a hearty, warming dish that originates from Northern India. Bone-in chicken pieces are cooked with pickling spices, onions, tomatoes and curd, which is similar to thick yogurt. This is a highly spiced dish with lots of complex flavours and is served with a garnish of freshly grated ginger and coriander leaves. Enjoy achari chicken with steamed rice or paratha, which is a flatbread that's pan-fried and ideal for soaking up the leftover sauce from this dish.

Chicken Pulao

Chicken pulao is a one-pot pilaf dish that's light and subtly spiced. It consists of basmati rice, boneless cubes of chicken and a variety of spices including turmeric, garam masala, star anise, cumin and cardamom. The chicken is marinated in a yogurt blend with ginger, garlic and chilli powder, which makes it tender and juicy, and all the ingredients are gently cooked together in a covered pan until the rice is fluffy. Kolhapuri Chicken

The sauce is made with fresh tomatoes, shredded coconut, ground sesame seeds and poppy seeds, red chillies and ginger. Murgh Musallam

Murgh musallam is popular throughout North West India and is a rather extravagant dish that's ideal for serving as part of a celebratory meal. Either a whole chicken or deboned thighs are stuffed with a mixture of dried fruits, chopped nuts, hard-boiled eggs and spices, such as garam masala, turmeric and coriander powder. The meat is then marinated overnight in a spiced yogurt sauce before being slow-roasted. The finished dish is served with a creamy sauce seasoned with fennel, fenugreek and garlic. Enjoy murgh musallam with kaju jeera rice, which is a basmati rice dish cooked with onions, cashew nuts and ghee.
